For this week’s Foodie Fridays, the Beijing Bellini is something I’ve never heard of before until recently and it intrigued me. Do people usually put two and two together when thinking of fruity cocktails and China’s capital?
It is simply a new take on the classic bellini drink with a lychee. If you didn’t know what a bellini was, it is an originally an Italian drink composed of peach flavouring and sparkling wine. Well the Beijing Bellini uses a lychee aka litchi, a fruit native to China, and was popularized during the 2008 Beijing Olympics. It involves placing a lychee nut slice into mixed lychee wine mixed with sparkling white wine. This cocktail is something fun, not complicated at all and literally takes seconds to prepare. If you wanted a starter drink, this is the drink for you!
